Ingredients
1 cup (200g) uncooked white rice
4 cups (960ml) whole milk
1/2 cup (100g) granulated sugar
1/4 teaspoon salt
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
Optional toppings: raisins, nutmeg, or whipped cream
Preparation Steps
Step 1: Cook the Rice
In a medium saucepan, combine rice, 2 cups of milk, and salt.
Cook over medium heat until the rice is tender and most of the milk is absorbed, about 15–20 minutes.
Step 2: Mix Sugar and Eggs
In a small bowl, whisk together sugar and eggs until smooth.
Step 3: Combine Eggs with Rice
Gradually add a few tablespoons of the hot rice mixture to the egg mixture to temper the eggs.
Slowly pour the egg mixture back into the saucepan with the rice, stirring constantly.
Step 4: Add Remaining Milk and Cook
Add the remaining 2 cups of milk.
Continue cooking over low heat, stirring frequently, until the pudding thickens and becomes creamy, about 10 minutes.
Step 5: Add Flavor
Stir in vanilla extract and optional ground cinnamon.
Step 6: Chill or Serve Warm
Serve warm for a comforting dessert or refrigerate for 1–2 hours to enjoy chilled.
