In a large pot, dissolve the salt and brown sugar in 2 quarts of water. Add the turkey and refrigerate for 12–24 hours to ensure moist and flavorful meat. Remove the turkey from the brine, rinse thoroughly, and pat dry with paper towels.
In a small bowl, mix black pepper, paprika, garlic powder, onion powder, dried thyme, and cayenne pepper. Rub olive oil all over the turkey, then apply the dry rub evenly on all surfaces, including under the skin where possible.
