This one-pound meatloaf recipe is perfect for individuals, couples, or small families. It’s quick to put together, bakes in under an hour, and delivers all the savory goodness of traditional meatloaf—just in a smaller size.
Preheat your oven to 350°F (175°C). Lightly grease a small loaf pan or line it with parchment paper.
In a mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined. Avoid overmixing to keep the meatloaf tender.
Transfer the mixture into the loaf pan or shape it by hand on a baking sheet. Press lightly to form a loaf shape.
In a small bowl, mix ketchup, brown sugar, and mustard (if using). Spread evenly over the top of the meatloaf.
Bake for 40–45 minutes, or until the internal temperature reaches 160°F (70°C). Allow the meatloaf to rest for about 5–10 minutes before slicing to help retain its juices.
