One-Pound Meatloaf Recipe

One-Pound Meatloaf Recipe: Perfectly sized for easy, stress-free weeknight dinners with just the right portions.

Introduction

Meatloaf is a classic comfort food that’s hearty, flavorful, and easy to prepare. While most recipes are designed for large families, sometimes you just need a smaller portion. This one-pound meatloaf recipe is perfect for individuals, couples, or small families. It’s quick to put together, bakes in under an hour, and delivers all the savory goodness of traditional meatloaf—just in a smaller size.

Ingredients

  • 1 pound ground beef (80/20 or 85/15 lean-to-fat ratio works best)
  • ½ cup breadcrumbs (or rolled oats)
  • ½ cup milk
  • 1 egg, lightly beaten
  • ½ small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup ketchup (for topping)
  • 1 tablespoon brown sugar (for topping, optional)
  • ½ teaspoon mustard (optional, for topping)

Preparation Steps

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Lightly grease a small loaf pan or line it with parchment paper.

Step 2: Mix the Meatloaf

In a mixing bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined. Avoid overmixing to keep the meatloaf tender.

Step 3: Shape the Loaf

Transfer the mixture into the loaf pan or shape it by hand on a baking sheet. Press lightly to form a loaf shape.

Step 4: Add the Topping

In a small bowl, mix ketchup, brown sugar, and mustard (if using). Spread evenly over the top of the meatloaf.

Step 5: Bake

Bake for 40–45 minutes, or until the internal temperature reaches 160°F (70°C). Allow the meatloaf to rest for about 5–10 minutes before slicing to help retain its juices.
