Ingredients
1/2 cup small pearl tapioca
2 1/2 cups whole milk
1/4 teaspoon salt
1/2 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
Optional: ground cinnamon or nutmeg for garnish
Preparation Steps
Step 1: Soak the Tapioca
Place the tapioca pearls in a bowl and cover with 1 cup of water.
Let soak for 30 minutes, then drain.
Step 2: Cook the Tapioca
In a medium saucepan, combine soaked tapioca, milk, and salt.
Cook over medium heat, stirring frequently, until the mixture begins to thicken, about 10–15 minutes.
Step 3: Prepare the Eggs
In a small bowl, beat the eggs lightly.
Gradually add a few tablespoons of the hot tapioca mixture into the eggs to temper them.
Step 4: Combine Eggs and Tapioca
Slowly pour the egg mixture back into the saucepan with the tapioca, stirring constantly.
Cook for an additional 2–3 minutes until thick and creamy.
Step 5: Add Vanilla
Remove from heat and stir in vanilla extract.
Step 6: Chill or Serve Warm
Pour the pudding into individual bowls or a large serving dish.
Serve warm, or refrigerate for at least 2 hours to enjoy chilled.
