A gluten-free meatloaf uses alternatives like oats, almond flour, or gluten-free breadcrumbs, keeping the meatloaf moist, flavorful, and safe for anyone avoiding gluten. This recipe is simple, delicious, and perfect for family dinners or meal prep.
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
If using gluten-free oats, combine them with milk in a small bowl and let them sit for 5 minutes to soften.
In a large mixing bowl, combine the ground meat, soaked oats (or gluten-free breadcrumbs), eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined. Avoid overmixing to keep the meatloaf tender.
Transfer the mixture into the prepared loaf pan and shape it evenly.
Mix ketchup, brown sugar, and mustard (if using) in a small bowl. Spread the mixture evenly over the top of the meatloaf.
Bake in the preheated oven for 50–60 minutes, or until the internal temperature reaches 160°F (70°C). Let the meatloaf rest for 10 minutes before slicing.
