Gluten-Free Meatloaf

Gluten-Free Meatloaf Recipe

Gluten-Free Meatloaf: A flavorful, healthy twist on classic comfort food—completely free of gluten.

Introduction

Meatloaf is a classic comfort food, but traditional recipes often use breadcrumbs as a binder, which contain gluten. For those following a gluten-free diet, this doesn’t mean you have to miss out on this hearty dish. A gluten-free meatloaf uses alternatives like oats, almond flour, or gluten-free breadcrumbs, keeping the meatloaf moist, flavorful, and safe for anyone avoiding gluten. This recipe is simple, delicious, and perfect for family dinners or meal prep.

Ingredients

  • 2 pounds ground beef (or a mix of beef and pork)
  • 1 cup gluten-free oats or gluten-free breadcrumbs
  • 1 cup milk (dairy or plant-based)
  • 2 eggs, lightly beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce (ensure gluten-free)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)
  • ½ cup ketchup (for topping)
  • 2 tablespoons brown sugar (for topping, optional)
  • 1 teaspoon mustard (optional, for topping)

Preparation Steps

Step 1: Preheat Oven

Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.

Step 2: Soak the Oats

If using gluten-free oats, combine them with milk in a small bowl and let them sit for 5 minutes to soften.

Step 3: Mix the Meatloaf

In a large mixing bowl, combine the ground meat, soaked oats (or gluten-free breadcrumbs), eggs, onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined. Avoid overmixing to keep the meatloaf tender.

Step 4: Shape the Loaf

Transfer the mixture into the prepared loaf pan and shape it evenly.

Step 5: Add the Topping

Mix ketchup, brown sugar, and mustard (if using) in a small bowl. Spread the mixture evenly over the top of the meatloaf.

Bake in the preheated oven for 50–60 minutes, or until the internal temperature reaches 160°F (70°C). Let the meatloaf rest for 10 minutes before slicing.
