Ingredients
2 pounds (900g) beef stew meat, cut into bite-sized pieces
1 medium onion, chopped
3 cloves garlic, minced
8 ounces (225g) mushrooms, sliced
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon paprika
Salt and black pepper, to taste
1 cup sour cream
2 tablespoons all-purpose flour (optional, for thickening)
8 ounces (225g) egg noodles or rice, cooked
Optional garnish: chopped parsley
Preparation Steps
Step 1: Prepare the Slow Cooker
Place the beef stew meat, chopped onion, minced garlic, and sliced mushrooms into the slow cooker.
Season with salt, black pepper, paprika, Worcestershire sauce, and Dijon mustard.
Pour beef broth over the ingredients.
Step 2: Cook the Beef
Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until the beef is tender.
Step 3: Thicken and Add Creaminess
About 30 minutes before serving, stir in the sour cream.
If you prefer a thicker sauce, mix flour with a small amount of water to create a slurry and stir it into the slow cooker.
Continue cooking for the remaining 30 minutes to allow the sauce to thicken.
Step 4: Serve
Serve the creamy beef stroganoff over cooked egg noodles or rice.
Cut the beef into uniform pieces for even cooking.
Use full-fat sour cream for a richer, creamier sauce.
Avoid adding the sour cream too early to prevent curdling.
